Chilaquiles

What is chilaquiles??

It’s typically corn tortillas cut into quarters and lightly fried or baked for a lighter version are the basis of the dish. Green or red is poured over the crisp tortilla triangles. The mixture is simmered until the tortilla starts softening. Pulled chicken is sometimes added to the mix. It is commonly garnished with crema , crumbled quest fresco, sliced onion, and avocado slices.

Chilaquiles can be served with refried beans, eggs and avocados

Usually, chilaquiles are eaten at breakfast or brunch. This makes them a popular recipe to use leftover tortillas and salsas.

Recipe

Ingredients:

1- Tapesayeule smokey Salsa verde

2- Tortilla chips (I like the traditional Mexican ones but any unflavoured tortilla chips will do the trick.)

3- Your favourite toppings… Avocados, pico de Gallo, refried beans, queso fresco, crema, cilantro, pickled onions, etc.
You can be really creative with that one!

Steps:

1- Put the tortillas and the smokey salsa verde in a pan, stir and cook on medium heat until just soft. If you want it softer, cover the pan so the condensation makes its magic!

2- Cook your egg the way you like it! (Optional step)

3- Place in your place and top with your favourite toppings!
